Seriously though, these popsicles are hands down the best popsicles we have ever made!
So it’s a good thing they are easy to make because they have been on heavy rotation all month long.
These popsicles are made with 4 easy ingredients – strawberries, yogurt, maple syrup, and vanilla. But the reason these popsicles are so crave-worthy is because we spend a few minutes simmering the strawberries, maple syrup and vanilla into literally the best strawberry compote ever made. Then we swirl in some yogurt, spoon these strawberry/yogurt mixture into some popsicle molds and let the freezer do its magic.
And because these popsicles are filled with nothing but healthy ingredients you can feel good about serving them for breakfast, snack, lunch and of course a dessert. Popsicles for breakfast on a hot summer day will pretty much blow any kid’s mind 🤯!

Ingredients

- Strawberries: fresh or frozen strawberries work in this recipe. I usually use frozen strawberries in this recipe because we always have some on hand and they tend to be a little sweeter than fresh strawberries, but hulled fresh strawberries will work just as well.
- Yogurt: you can use plain or flavored yogurt like vanilla or honey (for babies over 1 year). If you are using plain yogurt and don’t want it to be as tart, you can always add a few tablespoons of maple syrup to the yogurt before mixing it into the strawberry base.
- Maple Syrup: to add in a little extra sweetness to these popsicles. This is an optional ingredient.
- Vanilla Extract: added to round out the flavors of the strawberries and maple syrup. Adding in the vanilla is optional but I love the flavor it gives.
Diary-Free Tip: to make these popsicles dairy-free you can use any plant-based yogurt you prefer – coconut, cashew, soy, oat, etc.

Not only are these popsicles delicious, but they are full of nutrients as well!
Strawberries: are full of important vitamins and minerals that benefit our health. They are high in vitamin C; in fact, one cup contains about 180% of the recommended Daily Value for kids, making it an excellent source of this vitamin. They’re also a good source of fiber and contain potassium, folate, and numerous antioxidants. A majority of strawberries are made up of water, so they are a great food to keep your kid hydrated.
Yogurt: is full of protein and calcium to help develop muscles and bones as well as probiotics, or good bacteria, that help your kid maintain a healthy gut.
Instructions
- In a medium saucepan, add the strawberries, maple syrup and vanilla extract.
- Heat on medium-low for 10 minutes, stirring often and mashing the strawberries with the back of a wooden spoon. Let cool for 10 minutes.
- If you want a smooth consistency in your popsicles, then you will need to blend this strawberry compote in a blender or with a hand-held immersion blender until smooth. We like some strawberry chunks in our popsicles, so we mash the compote with a wooden spoon.
- Gently swirl in the yogurt to the strawberry compote.
- Spoon the liquid into a popsicle mold of your choice.
- Freeze for 5 hours or preferably overnight.
- Serve and enjoy!
Fruit Tip: Feel free to substitute the strawberries with cherries, peaches, blueberries or raspberries or a combo of any fresh or frozen fruit you have on hand.

Cooking with Kids
You can easily have your kids help you make these fun popsicles.
Toddlers
- Toddlers can help measure and pour the ingredients into the saucepan.
- Once cooled, toddlers can help spoon the popsicle mixture into the popsicle molds.
- With help, they can place the popsicle molds into the freezer. My kids always spill the tray at this point, so just give them an extra hand.
Kids
- You can pretty much let older kids make this recipe by themselves.
- They can pick out and measure all of the ingredients into the saucepan. With adult supervision, kids can heat and stir the strawberries on the stove.
- Kids can swirl in the yogurt and pour the popsicle mixture into the molds and place the popsicles into the freezer.

Recipe Tips
- Strawberries: I like to use frozen strawberries in this recipe because my kids eat all of the fresh ones, but you can certainly use fresh hulled strawberries if you have some on hand.
- Sweetness: depending on the sweetness levels of your strawberries, you may need to add in more maple syrup or honey (for over 1 year old) than the recipe states below. Taste the popsicle mixture after you mix in the yogurt it to see if you need to add any sweetener.
- Releasing from Mold: if you are having a hard time releasing the popsicles from the mold, then you can try running the mold under warm water for 15-30 seconds.
- Yield of Recipe: some molds are bigger or smaller than others. So it’s important to know that you may have to double or triple some recipes depending on the size of your molds and how many popsicles you are making. I have always found that if I make too much popsicle mixture, my kids are happy to drink it like a smoothie for me;).
- Outside Time: for babies and toddlers, eating popsicles is a great outdoor activity so you can avoid some of the mess.

Ingredients
- 2 cups strawberries (see notes)
- 2-4 tbsp maple syrup, optional but highly recommended
- 1 tsp vanilla extract
- 1 1/2 cup yogurt (see notes)
Instructions
Favorite Strawberry Yogurt Popsicles
- Simmer: in a medium saucepan, place the strawberries, maple syrup and vanilla and heat over medium-low heat for 10 minutes.
- Break down Strawberries: Using the back of a fork, break down the strawberries into small chunks. If you want a completely smooth strawberry popsicle, then use an immersion blender or blender to puree the strawberries.
- Cool: let this strawberry compote cool for 10-15 minutes.
- Mix in Yogurt: once cool the strawberry compote should have thickened up a little bit. Add the yogurt to the strawberries in dollops and gently stir. You can stir completely so the yogurt and strawberries are completely combined or marbled the yogurt and strawberries so the popsicles have a more swirled effect.
- Fill Popsicle Trays: gently spoon the strawberry yogurt mixture into a popsicle mold of your choice.
- Freeze: place the popsicle mold into the freezer and freeze for at least 5 hours, preferably overnight.
- Eat: gently take the popsicle out of the mold, serve and enjoy!

Do you recommend Greek yogurt or regular yogurt?
You can use either. I usually make these with regular plain whole milk yogurt but Greek yogurt would work as well.
