Sweet Potato Pancakes for Baby
Pancakes are one of my favorite breakfasts 🥞 and babies and toddlers love them too!
These sweet potato pancakes are so delicious and they are a great healthy way to start the day for your little ones. Plus, they won’t even know we are sneaking in a little veggie power 🍠 into their favorite breakfast food 👍.
They are super quick and easy to make plus they freeze really well, so be sure to make a big batch for an easy to grab breakfast for baby.

Ingredients
- Sweet Potato: you can use homemade or store-bought puree or cooked and mashed sweet potatoes in this recipe. Sweet potatoes are such a good source of fiber, iron and vitamins B and C
- Cottage Cheese: can also use full-fat greek yogurt. Cottage cheese is rich in protein and a great source of folate.
- Flour: you can use whole wheat, all-purpose, white whole wheat or a gluten-free flour blend.
- Eggs: eggs help to bind the dry ingredients together as well as providing lots of vitamins and minerals.
- Baking Powder: helps to get the pancakes perfectly soft and fluffy.
- Cinnamon: Cinnamon adds a little flavor and sweetness.
How to Serve These Pancakes
I served these pancakes with a side of plain full-fat yogurt and a small amount of frozen and thawed and then mashed berries. Here are some other great ways to serve these pancakes to baby:
- Cut into long strips with a spread of peanut butter or other nut butter on top.
- Spread cream cheese on one pancake and then top with a second pancake and cut or ripped into chunks.
- Torn and served with a side of your favorite baby food puree or applesauce to use as a dip.
- Served in chunks with mashed avocado on top.
Instructions
- In a medium bowl, add in all of the ingredients and stir until combined. If using cottage cheese, the batter will have chunks in it.
- Heat a large non-stick skillet on medium heat. Spray or oil skillet. For small pancakes add 1 tablespoon of batter to the skillet at a time and let cook for 3-4 minutes or until golden on the bottom and bubbles appear along the edges. Flip and let cook for another 2-3 minutes. Repeat with all of the batter.
- Serve and enjoy.
TIPS FOR MAKING THE BEST Pancakes
- Take care not to over mix the batter. The dry ingredients should be just combined into the wet. If you over mix the pancakes won’t be soft and fluffy.
- Don’t have the skillet on too high a heat or the outsides will burn and the middle will still be raw.
- You can use homemade or store-bought sweet potato puree or cooked and mashed sweet potatoes.
Storage
These pancakes for baby are great for make-ahead meals. Store them in an air-tight container in the fridge for 5 days. These pancakes freeze well and can be stored in the freezer for up to 3 months. You can reheat them in the microwave or in the oven.

This was delicious everyone in the family loved it!
These remind me of French toast! I love making a batch of these and freezing them with wax paper between. To reheat I wrap one pancake in a damp paper towel and microwave 15-20 seconds. It can be a little on the thicker/chewy side for a younger baby, so I soak it in milk before serving to my now 10mo. Great to serve with a fruit or sweet potato puree too. In all honesty I eat these more than my baby!

I tried this recipe using Milk instead and it turned out good. The only reason I’m not saying Great is that I could taste the baking powder so strongly. I’ll suggest using less baking powder.
So glad you liked this recipe. Sometimes baking powder will taste acidic if it’s old, and baking powder only lasts around 6 months. So maybe switch your can out and use a little less. Hope this helps.

It’s in the recipe card, but kinda hidden. I thawed a handful of mixed berries, then mashed them with the back of a fork. Super easy!
Wow! These are a huge hit! My son has allergies (wheat) so we used gluten free flour/millet flour and it turned out amazing.

How would you recommend reheating these in the microwave (time and power settings)?
Some microwaves have a ‘warm’ setting, or you can do high power in 20-second intrevals until warm.

He loved these, I’m at altitude and they were a little dry so I added a little unsweetened homemade applesauce and that made them perfect consistency and added just a little sweetness. I love that these don’t have anything extra in them, they’re a great quick or on the go snack.

You can try using applesauce or more sweet potato puree.
Just made these but swapped out the sweet potato for pumpkin & did 1/4c wheat and 1/4 white flour. Added a dash of vanilla. Delish. I think the babe will love them!

I love this recipe so much! Make it almost every Saturday morning for the family, all enjoy them! I’ve used cottage cheese and yogurt. Both work well!

These are incredible. I made them a day (night) before so they were ready for next day breakfast, just reheat and enjoy. I couldn’t resist while I was cooking and had 1 myself. I Used ricotta instead of cottage cheese. Love the texture and baby loved it as much as mom.

What can you use in replace of baking powder?
I’m a habitual recipe tweaker, added a tablespoon of sugar and a tablespoon of plant based protein powder! I forgot the baking powder so they’re not fluffy but they taste so good I had to sneak a couple from Bubby’s tray!

I just need to clarify about the storage of these pancakes. Should i store the batter uncooked in the freezer? Or should i cook the pancake batter first, then store them in the freezer? I have a very energetice toddler so a faster bfast preparation homemade will really help me a lot.
Sorry for the miscommunication – I would recommend that you make them all first and then you can store them in the fridge or freezer. I guess you can store the batter in the fridge if you prefer but I like to make one mess and then have easy leftovers that I can just reheat at a moment’s notice. Hope that helps.
Just made these but instead of eggs I used cinnamon applesauce and instead of cottage cheese I used vanilla Greek yogurt. These are so good I may even have them for breakfast!

This specific batter came out way too thick… not sure what happened? Used everything except just substituted applesauce for the eggs… wonder why that happened.
You can always add in a little milk to thin out any pancake batter to your preferred texture.

You can sub in 1/4 cup of applesauce per egg. So 1/2 cup for 2 eggs. Let me know how this substation works out.
